About the Role Our client, a luxurious safari lodge nestled in the wilderness near Nelspruit , is seeking a dynamic and experienced Food & Beverage Director to lead all aspects of their culinary and beverage operations. You will be responsible for menu development, inventory management, staff training, budget control, and upholding the highest standards of quality and hygiene across multiple dining outlets, including restaurants, bars, and in-room dining. Key Responsibilities

• Oversee all food and beverage operations, ensuring exceptional quality, service, and guest satisfaction.
• Develop innovative and diverse menus that highlight local flavors and international cuisine, catering to a discerning clientele.
• Manage and mentor the culinary, bar, and service teams, fostering a culture of excellence and professionalism.
• Control beverage inventory, purchasing, and cost management to optimize profitability.
• Develop and manage annual budgets for the Food & Beverage department, ensuring financial targets are met.
• Implement and maintain rigorous hygiene, sanitation, and safety standards throughout all F&B operations.
• Collaborate with the General Manager and Marketing team on promotions, events, and guest experiences.
• Ensure efficient operation of all dining outlets, including restaurants, bars, room service, and banqueting.
• Conduct regular staff training sessions on service standards, product knowledge, and upselling techniques.
• Monitor industry trends and implement best practices to enhance the F&B offering.

Requirements

• Minimum 10 years of progressive experience in Food & Beverage management, with at least 5 years in a Director-level role, preferably within luxury hotels, resorts, or lodges.
• Extensive knowledge of fine dining cuisine, wine, spirits, and mixology.
• Proven ability to manage budgets, control costs, and drive profitability.
• Strong leadership, team-building, and communication skills.
• Demonstrated experience in menu engineering and development.
• Expertise in health, safety, and sanitation regulations (HACCP).
• Ability to work flexible hours, including evenings, weekends, and holidays, often in remote settings.
• Excellent problem-solving and decision-making skills.
• Bachelor's degree in Hospitality Management, Business Administration, or a related field, or equivalent experience.
